This hearty creamy tortellini soup is full of delicious vegetables, Italian sausage and cheese. This is the perfect soup for a cold day but we enjoy it year round.

❤️WHY WE LOVE THIS RECIPE
We love how simple this recipe is to make. It comes together quickly and reheats well, too. You make all of this in one pot, and it’s so good! You can throw in any vegetables you like, but try it with the spinach. It’s a great addition. Then you add the whipping cream and cheese, and it comes out creamy and delicious.
🍴KEY INGREDIENTS
- Ground mild Italian sausage or Italian style ground turkey
- Yellow onion
- Petite diced tomatoes
- Tomato paste
- Chicken broth
- Minced garlic
- Dried basil
- Oregano
- Mustard powder
- Black pepper
- Heavy whipping cream
- Fresh spinach
- Refrigerated cheese tortellini
- Parmesan Cheese for topping
🍽️HOW TO MAKE
This soup is really easy to make and one you will make time and time again. We like to use a big dutch oven to make this and let it all cook in one pot so the flavors really simmer well.
COOKING STEPS
Step 1
In a dutch oven over medium heat brown sausage or turkey, about 8 -10 minutes and drain off any grease.
Step 2
Next add diced onions and cook for 3 minutes over medium heat. Add diced tomatoes, tomato paste, chicken broth and all of the seasonings. Let simmer 15-20 minutes.
Step 3
Add tortellini, whipping cream and fresh spinach. Simmer around 10 minutes or until the spinach is wilted and the tortellini is tender.Garnish with Parmesan cheese.
⭐TIP
Some people add Kale to this soup instead of the spinach. We personally like the spinach but this is a great soup recipe to experiment with and make your own.
